Chocolate Chip Cookies!

I've been experimenting alot lately with trying to figure out how to make our sweet treats a little bit healthier... Splenda, Whole Wheat Flour, Egg Whites, applesauce instead of oil, etc...  Needless to say, nothing is nearly as good as the regular full fat recipes.  Marc's been complaining about my experimentation, and quite honestly I don't blame him.

On Tuesday, I had a day home with the girls and we decided to make chocolate chip cookies.  Back of the package, chocolate chip cookies.  Full Fledge fattening 2 stick of butter cookies. 

Rewind... Marc is on layoff right now and he's been organizing.  Sometimes it's fantastic, sometimes it drives me bonkers.  He decided to organize my baking cupboard.  It looks awesome... but I noticed something later in the evening that he did it.  My flour was in the other food cupboard.  Honestly, I was ticked and thought that's dumb and it makes NO sense.  Let's rewind another moment... my flour is in a ziplock bag (not labeled) because the packaging it comes in leaks.

Back to baking cookies... I followed the directions to a tee and us girls taste-tested as we made the cookies!  YUM... cookie dough!  We baked the cookies and they were flat as could be and didn't get that golden brown color.  I put them in for a bit longer, but they just didn't brown up the way they should.  But, whatever... I KNOW I followed the directions to a tee.

They cooled and tasted just fine.  We've been scarfing them down over the last couple days.  Everybody is happy with the full fledge fat cookies.

Fast forward to this morning when my cell phone rang and this conversation took place:
"I know your secret ingredient to your cookies."

"What are you talking about?"

"I know your secret ingredient."

"Whatever, I didn't do anything.  I followed the recipe to a tee."

"Pancake mix."

Marc laughing hysterically at this point.

"What are you talking about?"

"Pancake mix.  That's your secret recipe."

At this point, I'm laughing just as hard.  Oh my god!  Marc put pancake mix into a plastic ziplock bag in the food cupboard unlabeled.  I didn't use flour in our cookies... I used pancake mix, and never knew it.  The flour is still in my baking cupboard where it belongs!

And just so y'all know.  Pancake mix works just fine for cookies, except they are extremely flat.  I think I now know where the saying 'flat as pancakes' comes from!
